Lamb
Lamb and mutton dishes are an excellent event option. Lamb carries itself elegantly to the plate. However, you need to learn to master its flavors.
It can be heavy-handed, oily and blah. Or with practice it can be mysterious, complex and very savory in a "world traveler" sort of fashion.
Master the flavor palettes of lamb and the culinary techniques. They are more key with this protein than most.
I would also highly recommend learning to cook lamb shank over an open flame - magnificent if done well and a large important social component of many, many global cuisines.
