A recipe - I almost don't like them. They can be wrong, misleading and deficit of critical information. I wouldn't attempt one unless I understood the ingredients, the techniques and flavor palette involved. These recipes are projects that depend on those knowledge components. Treat them almost like the picture an artist paints in his mind before he takes up brush and canvas.

Try to think this way; first, taste the dish in your mind. Do the ingredients construct the flavors, does the texture lay upon your tongue correctly, is the background noise filled with the spice and savory elements called for. Second, visualize the steps and the harmony you need to bring to the elements both in timing and balance of flavor. Finally, season in layers. Season gently while always tasting. Cook with diligence! Meaning, rapt attention, rhythm and restraint. Restraint in temperature, vigor and seasoning.

Work up to it and not come back down to it. (You'll throw away a lot less food)
