Lime Juice

Limes are best when bright green and thin-skinned. They, along with their descendant, lemons, brighten and enhance flavors in food.

Providing that "pop" otherwise muted in some dishes. Lime slices or wedges are often added to cold beverages such as beer and cocktails. They make a great garnish for Hispanic and Asian cuisine and can be squeezed over other raw fruits to add flavor while preventing them from turning brown.

Lime juice is also a great foundation for salad dressing, and adds a exotic undertone when sprinkled over carne asada, fajita meat and others peppered dishes. Adding the zest - the green part of the peel - is a frequent addition in many recipes.
