Heavy Whipping Cream

Heavy Whipping Cream

At 30% fat content, heavy whipping cream is the most durable of the heavy cream families. It will proivde a very workable whip and sustain its texture well, particulary if kept chilled.

Higher fat content products however are susceptible to curdling so care must be used while putting these creams in hot liquids.
