Beef Tenderloin Roast
The most tender beef roast is lean, succulent and elegant, with mild flavor.The three main "cuts" of the tenderloin are the butt, the center-cut, and the tail.
The butt yields very small medallions of steak. The center-cut is where we get the "filet mignon". The tail yields pieces too small for steak but an excellent choice for a tender stew meat.
