Greek Tzatziki

Tzatziki is a classic Greek condiment made of yogurt, grated cucumber, garlic, lemon or vinegar, and fresh herbs like dill or mint or thyme, and sometimes olive oil. While the recipe can vary from region to region in Greece, it is served with the mezes, or small plates appetizer portion of the meal, and can remain on the table as a condiment with roasted meats and vegetables.

Street foods like gyros or kabobs are always garnished with tzatziki.

What you need

  • 1/2 of a large cucumber, unpeeled
  • 1 1/2 cups plain full-fat Greek yogurt
  • 2 large garlic cloves, finely minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white vinegar
  • 1/2 teaspoon salt
  • 1 tablespoon minced fresh dill

Instructions

  1. Grate the cucumber and drain and dry thoroughly, let rest overnight in a drain, to help reduce the moisture (in a fridge). Key to success!
  2. Combine the yogurt, garlic, oil, vinegar, and salt in a large bowl. Cover and refrigerate overnight.
  3. Transfer the grated cucumber and fresh dill to the yogurt mixture and stir to combine.
