No Fail Creamy Cheese Dip with Rotel

Turns out having the perfect texture and re-heats very well in the "left over" phase.

What you need

1 pound ground Italian sweet sausage (I empty 2-3 links)
1 8-ounce package cream cheese, softened
1 8-ounce container sour cream
1 8-ounce package Velveeta-style cheese
1 can Mexican Rotel Tomatoes
Add diced jalapeno if you want more heat.

Instructions

  1. Brown sausage and drain.
  2. Heat cream cheese, melting cheese and sour cream in microwave or soup pan until melted.
  3. Stir in tomatoes and jalapenos (if using).
  4. Add sausage and mix well.

Can be kept warm in a crock pot and serve with tortilla chips.
