Mango Salsa

Our mango salsa is a great accompaniment for all of your summer meal time menus. It is refreshing and has a nice back note "kick" to it. Use it on fish tacos, with tortilla chips and as a great hot dog dressing.

Here you go, "How to properly cut a mango" from the mango.org folks.

What you need

  • 1 mango - peeled, cored, and cubed
  • 2 avocados - cubed
  • 1 cup chopped plum tomato, with seeds and white ribs removed
  • ½ cup diced red onion
  • ½ cup diced red sweet pepper
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon cider vinegar
  • 1 dash of Tabasco pepper sauce (to taste)
  • Salt and pepper

Instructions

Stir mango, avocado, tomato, onion, pepper, parsley, oil, brown sugar, juice, vinegar, pepper sauce, salt, and ground black pepper together in a bowl. Refrigerate salsa for at least 1 hour.
