Grilled Portabella Chevre and Arugula Sandwiches

Grilled Portabella Chevre and Arugula Sandwiches

The steak of veggie burgers. Serve on a bun with lettuce, roasted peppers, and aioli sauce.

Ingredients

  • 3 Tbs Olive Oil
  • 3 Cloves Garlic -- crushed
  • 3 Large portabella mushrooms
  • 1 Med Red Onion - diced
  • 6 Thick Slices crusty rustic style bread or rustic brioche bun
  • 4 Ounces chevre -- (goat cheese)
  • 2 Tablespoons roasted garlic mayo
  • fresh arugula leaves or other leafy lettuce
  • salt & freshly ground pepper
  • 1/2 Cup Pitted black olives, diced.
  • 1/2 Cup, Roasted Red Peppers

Directions

    1. Mix the olive oil with crushed garlic until smooth.
    2. Brush mushrooms olive oil mix. Grill on both sides until done - about 3-5 minutes per side. Salt & pepper to taste.
    3. Grill or toast the bread.
    4. Spread one piece with mayo and layer the other with the chevre.
    5. Fill with the mushroom, onion, black oilves, raosted red pepper and arugula.
