Worked well for us. Throw in the vegetable "kitchen sink" if so inspired.
What you need
- 1 Stalk of broccoli, broken up and stem removed
- 1 Head of cauliflower, broken up and stem removed
- 3 Stalks of carrots, coarsely dice
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/3 cup sour cream
- 1 (2.8 ounce) package French-fried onions
- 1/4 teaspoon black pepper
Instructions
Preheat oven to 350 degrees F (175 degrees C).
- Boil or steam (preferable) the vegetables until nearly done, yet stilll firm; drain.
- In a large bowl combine vegetables, mushroom soup, 1/2 cup cheese, sour cream, 1/2 can fried onions and pepper. Transfer to a 9x9 casserole dish.
- Bake in preheated oven for 30 minutes.
- Sprinkle with remaining cheese and fried onions*; bake 5 minutes longer.
*Note: If onion straws are not available, we have mixed fresh parm with bread crumbs for a substitute.
