Wild game, strictly speaking, means wild meats that are hunted or trapped, ideally by a licensed hunter following all the legal rules. This necessary adherence to the "rules" accurately describes the best means of securing a wild foodstuffs supply.
Many species living wild are targets for wild game cuisine. From grass eating cloven hoof animals (deer, elk and bison), fish and other aquatics to wild fowl (geese, duck and pheasant), these products are a seriously good addition to your repertoire. However, to assure a safe product, a seasoned veteran sportsman will understand the dangers of local diseases, the effort to conserve local stocks and finally the safe and required precautions for delivering the product from the wild to the table in a safe and sustainable manner.
