Fats and Oils

Oils span the range of use in the DIY kitchen. Flavorings, cooking, preserving and as an essential main ingredient, the many available choices abound.

The are 2 types that we can chose from, vegetable (or plant based) and animal based. Both have their applications in a healthy diet.

 Every kitchen should have a version of at least 4 main types: 1) olive oil for low temperature cooking and flavoring, 2) a high temperature oil (for cooking),3) a coconut, sesame or other "nutty" type for a sweet, musky flavor in frying and sauteing and  4) a flavoring or "finishing" oil for salads, marinades etc.
