Easy Blender Hollandaise Sauce

Ingredients

  • 3 egg yolks
  • 1/4 tsp salt
  • 1/4 Tsp. of cayenne
  • 1-1/2 Tsp. Lemon Juice
  • 1/2 cup butter

Directions

    1. Place eggs yolks, salt, pepper, and 1 tbsp lemon juice in the blender jar.
    2. Cut the butter into pieces and place it in a small microwave container and melt slowly until just before completely melted. (it will finish in the bowl)
    3. Cover in a blender and jog the egg yolk mixture for only a few seconds. Uncover, while at full speed, and start pouring the melted butter in, slowly.
    4. Before the last of the butter has gone in, the sauce will become "creamy". Taste the sauce, and add additional seasonings and lemon juice to taste.
    5. Serve immediately.
