Also known as "patates psites" (baked potatoes) or "patates ladorigani" (patatoes with olive oil and oregano), this is a staple in every Greek home.
What you need
- 2 pounds small Yukon Gold potatoes
- 2-3 lemon, juiced, and save some zest
- 2 tablespoons olive oil
- 2 Cloves garlic, crushed
- 1 teaspoon dried oregano
- Salt and pepper to tastepepper
Instructions
Heat the oven to 375°F.
- Cut the potatoes into wedges, lengthwise
- In a sizable bowl, mix the stock with the juice from the lemons, oregano and crushed garlic.Toss in the potatoes to coat
- Place into a large, deep ovenproof baking dish
- Drizzle with olive oil
- Season the potatoes well with salt and pepper, and zest
- Bake uncovered for about 30-40 minutes or until tender.
- Can also be placed under a very hot broiler, or air fryer for a few minutes to brown.
Serve with a squeeze of lemon juice.
