Quick casserole for a rainy day.
What you need
1 pound ground beef
1 onion, diced
1/2 sweet pepper, diced
1 cup instant rice
1 (14.5 ounce) can diced tomatoes
1-2 Cups Cream of Prepared Mushroom Soup
(Recipe here)
Enough to thoroughly fill the mixture without excess liquid.
1 tablespoon garlic powder
1 Tablespoon Italian seasoning
Salt and pepper to taste
6 Ounces of white cheddar cheese
Instructions
Preheat oven to 350 degrees F (175 degrees C).
Place the ground beef, pepper and onions in a skillet. Saute until beef is evenly brown. Drain.
Add the other ingrediets (except the cheese) Mix well and simmer for 10 minutes. Place in a casserole dish.
Top with cheese and bake for 15 to 20 minutes until cheese is just browning.
