Lemon Juice

Lemons are best when bright yellow and thin-skinned. They, along with their ancestor, limes, brighten and enhance flavors in food. Providing that "pop" otherwise muted in some dishes.

Lemon slices or wedges are often added to cold and hot tea. They make a great garnish for salads and can be squeezed over other raw fruits to add flavor while preventing them from turning brown.

Lemon juice is also a great foundation for salad dressing, and adds a exotic undertone when sprinkled over fish. Adding the zest - the yellow part of the peel - is a frequent addition in many recipes.
