Beef Tenderloin Roast

Beef Tenderloin Roast

The most tender beef roast is lean, succulent and elegant, with mild flavor. The three main "cuts" of the tenderloin are the butt, the center-cut, and the tail.

The butt yields very small medallions of steak. The center-cut is where we get the "filet mignon". The tail yields pieces too small for steak but an excellent choice for a tender stew meat.
