Ingredients
- 3 egg yolks
- 1/4 tsp salt
- 1/4 Tsp. of cayenne
- 1-1/2 Tsp. Lemon Juice
- 1/2 cup butter
Directions
- Place eggs yolks, salt, pepper, and 1 tbsp lemon juice in the blender jar.
- Cut the butter into pieces and place it in a small microwave container and melt slowly until just before completely melted. (it will finish in the bowl)
- Cover in a blender and jog the egg yolk mixture for only a few seconds. Uncover, while at full speed, and start pouring the melted butter in, slowly.
- Before the last of the butter has gone in, the sauce will become "creamy". Taste the sauce, and add additional seasonings and lemon juice to taste.
- Serve immediately.
