Roasted Potatoes (Psites Patates)

Also known as "patates psites" (baked potatoes) or "patates ladorigani" (patatoes with olive oil and oregano), this is a staple in every Greek home.

What you need

  • 2 pounds small Yukon Gold potatoes
  • 2-3 lemon, juiced, and save some zest
  • 2 tablespoons olive oil
  • 2 Cloves garlic, crushed
  • 1 teaspoon dried oregano
  • Salt and pepper to tastepepper

Instructions

Heat the oven to 375°F.

  1. Cut the potatoes into wedges, lengthwise
  2. In a sizable bowl, mix the stock with the juice from the lemons, oregano and crushed garlic.Toss in the potatoes to coat
  3. Place into a large, deep ovenproof baking dish
  4. Drizzle with olive oil
  5. Season the potatoes well with salt and pepper, and zest
  6. Bake uncovered for about 30-40 minutes or until tender.
  7. Can also be placed under a very hot broiler, or air fryer for a few minutes to brown.

Serve with a squeeze of lemon juice.
