    Mock Mai Tai: Combine about one-half ounce of Triple Sec with two ounces orange juice. Add about one-half ounce lime juice and a small amount of simple syrup and amaretto. Add one ounce each of your favorite light and dark rum and serve over ice.

    Ingredients

    • 1 1/2 lb Pork, lean boneless, can be loin or small fresh ham
    • 1 cup of Pineapple, sliced in syrup
    • 1/2 cup Teriyaki sauce
    • 1/4 Green onion, finely chopped
    • 1/2 tsp Ground ginger
    • 1/4 tsp Garlic powder
    • 1 cup Rice, uncooked volume

    Directions

    1. Cut the pork into slices about 1/4 inch thick and place in a zip lock bag.
    2. Drain pineapple, reserving all syrup and place in a zip lock bag.
    3. Blend syrup, teriyaki sauce, onions, ginger and garlic powder: pour over pork and pineapple. CRefrigerate at east 1 hour.
    4. Meanwhile, cook rice according to package directions and prepare grill.
    5. Remove pork from marinade and grill about 5 inches from the fire for about 5 minutes on each side or until completely cooked.
    6. Pour pineapple and remaining marinade into large skillet and bring to a boil.
    7. Remove from heat and serve pork with sauce and pineapple over rice.

    Add an assortment of any vegetables that you like to the pineapple saute. We've done broccoli, red peppers, jalapeno, etc.
